Cooking makes me happy

Things that made me happy today:
-The Jets winning against the Flyers in a shoot out! Yeah!
-Making homemade cheese fries.

Things that made me sad:
Realizing that since becoming pregnant, my treadmill speeds seem a lot faster than usual.....  hmmmm

So since I've been pregnant, I haven't had any really crazy wierd cravings. Just more of what I would normally crave. Unfortunately it tends to be bad for me food.  Usually the craving starts when I hear a food mentioned, or see a picture of it somewhere. Well twice in the last week i have heard other people mention cheese fries.  I decided I had to have them.  I eased my guilt by taking a good walk on the treadmill and making the cheese fries at home in the oven.  I have to say, they were pretty yummy!
All you need is russet potatoes (cut in strips how you like them), olive oil, chili powder, sea salt and pepper for seasoning. Bake in the oven at 400F until golden brown on the bottom then flip and bake until the other side is crispy and golden brown as well. Sprinkle with cheese the place back in the oven until cheese is melted, sprinkle with green onions and enjoy!




Since I couldn't just eat cheese fries for dinner, i did also make a proper healthy meal :)
Broiled salmon with roasted garlic and fennel, Wild rice pilaf with walnuts and salad.
In the salad I used arugula and field greens, added chopped peppers, cucumber and almonds.  Often times i dress the salad with everything right in the bowl already and that's what I did here. I squeezed a quarter of a lemon wedge over the greens, added a few tablespoons worth olive oil, a splash of balsamic vinegar, sea salt and pepper to taste, and several pinches of sumac.  When My husband and I were in Turkey for our honeymoon we often came across a salad on menus called Shepherds salad. It usually consisted of peppers, cucumbers, red cabbage and arugula, among other things. At one guest house we asked the owner what was in it that made it have the great taste and she said sumac.  It kind of has a fruityness to it, and is great in salads!





Well, tomorrow is the second OB visit! We don't have our "official" ultrasound until the 21st, but I am still excited to find out how things are coming along, and hoping that the doctor thinks that I am where I should be size and weight wise!

  1. I have a vivid memory of delicious cheese fries on Madeira Beach. They looked like these do! Yum! :)
